Ingredients for Mushrooms:
Oyster Mushrooms (Amount optional)
1 Lemon (juiced)
Flour (your favorite)
Cornstarch
Frying Oil (your favorite)
Coconut Milk
Prepare clean mushrooms in a bowl and marinate in lemon juice. Lightly season with Cajun seasoning if you like. Be careful not to over season them. They will become salty. I only added Paprika and black pepper to mine. Allow mushroom to marinate for at least 30 minutes or more.
Add your favorite cooking oil to a skillet, in a bowl add flour, and cornstarch together. I did add Cajun seasoning to my flour mixture. In a different bowl add coconut milk or milk of choice to batter mushroom.
Place mushrooms in coconut milk then flour and add to frying oil. Cook until golden brown and mushrooms begin to float to the top of the oil.
Ingredients for Po Boy Sauce:
1/2 Cup of Vegan Mayo
1 Tablespoon of Ketchup
1 Teaspoon of Lemon Juice
Horseradish to taste *Read carefully most horseradish contains eggs.
1 Teaspoon of Sweet Pickle Relish Juice (don't add the pickles)
Cajun seasoning to taste
Paprika to taste
*Mix well and let it sit in the refrigerator at lease 15-20 minutes.
Don't forget the hoagie roll, tomato, and lettuce.
