Ingredients:
1 bunch of fresh kale (chopped)
2 to 3 carrot stalks (slit and cubed)
1 large tomato (chopped)
2 to 3 cloves of fresh garlic (minced)
1 large portobello mushroom (chopped)
4 to 6 okra (chopped)
1/2 cup of olive oil
Pink Himalayan salt and pepper to taste
Directions:
In a skillet on slow-medium heat add oil, garlic, mushroom and seasoning.
Allow the garlic to heat but don't allow it to burn, add tomatoes, carrots, cover with lid and allow them to simmer for 4 to 5 minutes. Add your kale, a little more salt and pepper to taste. Simmer for 4 to 5 minutes then turn off the heat and add okra and cover again with lid. Allow the vegetables to cook down a little more. Don't over cook them by allowing all the beautiful green to turn to a washed out green color.
